
Our assignment on Monday was to make a two tired buttercream wedding cake. The cake may appear big in the picture, but it is actually quite small (an 8” cake with a 6” top). For the assignment we had to use all white buttercream piping and create a cake topper. The bottom tier was decorated with a pearl border and swiss dots. Swiss dots are a pattern of three dots in the shape of a triangle, which are repeated in bands around the cake. The second tier had a pearl border as well with a swag border on the top of the cake. Where the swag meets the top of the cake I put hearts that had been made with pastillage. Pastillage is a sugar dough that dries hard minutes after it is rolled out. For my wedding cake top I made 3 marzipan roses that I painted pink, and attached them to a pastillage disk with petals. I also attached pastillage hearts to wire that I painted pink and red with the airbrush. As you can tell these hearts were attached to the cake and are flying out in every direction!
